Phoenix Zabaione

A traditional light Italian custard with a twist! Usually prepared with a sweet wine, this version uses Phoenix Gold Lager.

  • 2 egg yolks
  • 100g sugar
  • 100ml Phoenix Gold Lager
  • a pinch of cinnamon
  • sliced seasonal fruits
  • a pinch of sugar

Slice fruits, sprinkle with sugar and place in the bottom of a few beer glasses. Set aside. Put yolks and sugar in a bain-marie (water bath). A regular pan will do if you don’t have a bain-marie on hand. Whisk until well-mixed, then add the beer and cinnamon, mix again. Put directly on high heat, constantly whisking. If not using a bain-marie, take the pan on and off the heat from time to time to ensure pan doesn’t get overheated. You want to add loads of air, hence the continual whisking. Remove from heat and pour over the prepared glasses with fruit. Serve ASAP.
