Cheesy Spinach Pie

Prep time, 10 minutes; Cooking time, 40 minutes. Makes eight servings.

◦ 2 x 9-inch pie crusts
◦ 420 grams ricotta cheese
◦ 225 grams mozzarella cheese
◦ 80 grams parmeggiano cheese
◦ 265 grams diced medium/strong cheddar
◦ 1 bag frozen spinach, thawed and drained
◦ 1/4 teaspoon nutmeg
◦ 1/2 teaspoon salt
◦ 1/2 teaspoon pepper

Preheat oven to 350 F. Press one pie crust on a pyrex plate. In a large bowl, mix spinach, all cheeses, nutmeg, salt and pepper. Place mix on top of the pie crust, then place second pie crust on top, sealing the mix. Trim the sides and place  in oven for 40 minutes. Let rest for 10 minutes, then cut into wedges to serve.
